Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp oil (olive or coconut works well)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red bell pepper, diced
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tsp brown sugar
  • 2 tbsp lime juice
  • 1 tsp red pepper flakes
  • 1/4 cup cilantro, chopped

Instructions:

1. Cut the chicken into small bite-sized pieces and set aside.

2. Place a large pot over medium heat and add the oil. Once hot, add the onion, garlic, and ginger. Sauté for a few minutes until the onion is soft and fragrant.

3. Add the chicken to the pot and cook until browned on all sides, about 5-7 minutes.

4. Add the red pepper and continue to cook for another 3-5 minutes, until the pepper softens slightly.

5. Pour in the chicken broth, coconut milk, fish sauce, soy sauce, brown sugar, lime juice, and red pepper flakes. Stir to combine and bring the soup to a simmer.

6. Reduce the heat to low and let the soup simmer for 10-15 minutes, until the chicken is cooked through and tender.

7. Stir in the cilantro and season with salt and pepper to taste.

8. Ladle the soup into bowls and serve hot, garnished with additional cilantro if desired.

Variations:

If you want to mix things up with this recipe, there are plenty of ways to customize it to your liking!

Spice it up:

If you're a fan of spicy food, add more red pepper flakes or even a diced jalapeño pepper to the soup.

Vegetarian version:

Swap the chicken broth for vegetable broth and omit the chicken to make a vegetarian version of this soup.

Add noodles:

You can easily turn this into a heartier soup by adding noodles to the pot. Simply boil the noodles separately and add them to the soup before serving.

Serve with rice:

If you prefer a more substantial meal, serve this soup over a bed of steamed rice.
