Ingredients:
- 2 lbs. small red potatoes

- 1/2 cup mayo
- 2 tbsp. dijon mustard
- 1/4 cup diced red onion
- 1/4 cup diced celery
- Salt and black pepper, to taste
Instructions:
1. Begin by washing and scrubbing the potatoes. Cut them into bite-sized pieces and place them in a large pot. Cover the potatoes with cold water and add 1-2 teaspoons of salt.
2. Bring the potatoes to a boil over high heat. Then, reduce the heat to medium-low and simmer the potatoes until they are tender but not mushy. This should take about 15-20 minutes.
3. Once the potatoes are cooked, drain them in a colander and let them cool for a few minutes.
4. Meanwhile, in a small bowl, whisk together the mayo, dijon mustard, and a pinch of salt and black pepper until well combined.
5. In a large mixing bowl, combine the chopped herbs, diced red onion, and diced celery.
6. Add the cooked and cooled potatoes to the bowl with the herbs and veggies. Toss everything together until the potatoes are evenly coated.
7. Pour the mayo and dijon mixture over the potato mixture, and toss everything together until the potatoes are well coated with the sauce.
8. Taste the salad and adjust the seasoning as needed with salt and black pepper.
9. Cover the bowl with plastic wrap and refrigerate the herbed potato salad for at least an hour (or up to overnight) to let the flavors meld together.
10. When you're ready to serve, give the potato salad a good stir and check the seasoning again. Garnish with additional chopped herbs, if desired.
